Avocado Coconut Smoothie Recipe| Drink Recipes

I hate making an elaborate breakfast during summers. Thanks to the heat and lack of appetite. Plus i am a smoothie person. I love gulping down tall glasses of chilled smoothies and milkshakes made with fresh fruit at home. So i find summer a perfect excuse to make and gulp as many and as much of a smoothie i want.

My dad is here and he was sweet enough to lug along some nice avocados for me. While i did make some guacomole and a nice wrap with some of those buttery avocados, i wanted to try my hand at a smoothie.
While i was contemplating between a regular avocado smoothie and a combination of other fruits plus avocado smoothie, i realised that i really didnt want to go the regular route. So i decided to try a different combination- avocado and coconut. And oh boy! the smoothie made my tongue sing for hours. I was craving for it even after the last dregs of the pitcher was washed away. While i m going to make some more smoothies with this buttery goodness, i thought i should share away this super smoothie with you all. And yeah, expect some more avocado recipes from me this Summer. After all i have some more sitting nicely in the fridge.

Recipe For Avocado Coconut Smoothie

Yields 2 to 3 largish glasses

Avocado 1 big ripe
Desiccated coconut 2 tbsp
Vanilla ice cream 1 small scoop ( skip this for a vegan version)
Sugar 2 tbsp
Vanilla extract 1/2 tsp
Chilled Milk 2 cups ( Use almond milk for a nutty flavor and for a vegan version)
Ice cubes a few

Desiccated coconut 1 tbsp for garnish

1. Use chilled milk for best results.
2. Make sure your avocado is ripe or the smoothie will turn out to be bitter.
3. If you find the smoothie too thick, add a little more milk or water as desired.


Cut the avocado into two, discard the pit and scoop the flesh out.
In a blender, place the avocado, ice cream, ice cubes, sugar and vanilla and blend to a smooth puree.
Now, add milk to the mixture and blend again.
Once done, pour into glasses and top with some desiccated coconut.

Serve cold.

    It looks really yummy! I will try it these days. I have one question. The smoothie should be drunk right after making it? Or could I keep some in the fridge and drink it the next day? Thank you.

    That looks like a perfect smoothie .I tried avacado milkshake the regular one, but i cant taste more than half cup .Yours look like a diff smoothie ,Will def try it next time .
