Aloo Tikki Recipe is the base for many Chaat variations in India. In this post, I will walk you through how to make these in the air fryer. This is an easy no onion garlic recipe that features all things delicious including nuts, raisins and Paneer. The best thing about these Aloo Paneer Tikkis is that you can make a big batch in one go easily.

Pro Tips
- Once the potatoes are boiled, drain them completely in a colander and then peel them. If there is any water in the potatoes, the mixture will become soggy and wont hold shape.
- Mash the potatoes to a smooth mixture. I recommend grating the boiled potatoes if you are a beginner.
- Use a block of paneer instead of cubed paneer. This helps in grating easily.
- If you are a rookie, you can use a dessert ring to shape the Tikkis. Alternatively, you can also use Sushi shapers to shape the Tikkis.
Method
Prep Work
Wash, halve and boil the potatoes. Drain them completely, allow them to cool and peel the potatoes. Grate the paneer.
Making the Tikki mixture
To a mixing bowl, add the boiled potatoes, ground spices, cashews, raisins, crushed coriander seeds, grated paneer, salt, finely chopped ginger and chopped cilantro. Bring together everything, mash the potatoes, mix and combine everything to a stiff dough.
Shaping the Tikkis
When done, divide the mixture into 15 equal portions. Shape each portion into a 1 inch thick roundel, like you see in the picture.
Air fryer temperature and settings
Brush each Tikki with 1/4 tsp oil or spray them with an oil spray. Arrange them in the air fryer basket in a single layer. Air fry for 12 minutes at 350F (180C). At the half way mark, flip the Tikkis with a wooden or silicon spatula and continue to finish cooking the other side.
In picture 7, the Tikkis are shown after 1/2 way mark (after 6 mins of air frying). Picture 8 shows the fully air fried Tikkis ( 12 mins of air frying).
Oven Method
If you do not have an air fryer, you can also make this in the oven. In fact, the oven method is the best for making a large batch of these yummy treats. Preheat oven to 350F (180C). Arrange the shaped Tikkis on a lined baking sheet. Brush each roundel with 1/4 tsp oil.
Bake in the preheated oven for 15 minutes. Flip the Tikkis after the 8th minute and continue to finish baking for the remaining time.
Stovetop Method
No air fryer or oven? No sweat at all! Heat a cast iron gridle and brush the surface with 1 tbsp oil. Place about 5 to 6 shaped roundels on the gridle and cook on medium flame until golden brown on both sides.
A batch of these take about 3 to 4 minutes on medium heat when cooked on stovetop. My favorite gridle for this is the 10 inch Lodge Cast Iron gridle. Alternatively, a 10 inch skillet also works here.
